Fall Recipe

Creamy Chicken Chili

4 large chicken breasts (or boneless)
3-4 cups chicken broth (water and bouillon cube)
2 cans cream of chicken soup
large onion (chopped) or 2 T onion powder
3 cans great northern beans with juice
1 can yellow kernel corn, drained
1 pkg. ranch dressing mix
1 pkg. taco seasoning mix
1/2 stick butter or margarine

Boil chicken and onion in water with chicken bouillon cube.
Remove chicken and cut up in cubes, set aside.
add remaining ingdredients to broth and simmer 10-15 minutes.
Add chopped chicken back to pot and simmer another few minutes.

Last Year's Fall

Fall of last year, Scott surprised me with a vacation to one of our favorite places... Las Vegas.  Our trips to Vegas are always filled with excitement, and no one trip is like the last.  The city is dynamic, making each and every visit a world of new things to see and do.  This trip was special because we had never visited Vegas during the Fall season.  Each season/holiday, the Bellagio hotel builds an exhibit portraying that specific time of year -- always a sight to see.  The Bellagio's Fall exhibit was nothing less than spectacular!  Though pictures do not do it justice, they are still worth sharing.  Enjoy!












One of our favorite things about Vegas is the entertainment.  On this trip, we saw The Beatles LOVE Cirque du Soleil.  Amazing!

We enjoyed a late night dinner at the Paris hotel, under the Eiffel Tower, with a perfect view of the Bellagio fountain show just across the street.

Columbia, South Carolina

We made the trip to Columbia, SC with the Crimson Tide.  Scott is now one step closer to his goal of attending a Bama game at every SEC stadium.  We will reach this goal next year when we travel to Gainesville, Florida.  Columbia is a nice city and we enjoyed our stay!

It was a tough loss for Alabama -- one that we all dreaded but knew would eventually come.  Congrats to a good South Carolina team that played a near flawless game.  We are looking forward to the remainder of the 2010 season!  Roll Tide!!!

One Month and Running

As many of you know, Scott is running the New York Marathon on Sunday, November 7th - one month from today.  Scott is running in honor and memory of his friend Victor Ellis, a former Alabama football player who lost his life to cancer at the age of 28.  With the help of many, Scott has raised 4,500 for the American Cancer Society.  We are so very thankful to all who have given.



Since he started to train in May, Scott has been running non-stop  -- even on the sandy beaches during summer vacation.  He is now 600 miles into his training plan!  I think he has covered every stretch of ground in the Homewood/Mountain Brook area.  


Scott and I were able to visit the Rick and Bubba show and share Victor's story with the listeners.  This was an amazing opportunity to gain tremendous support toward Scott's marathon purpose.  A big "Thank you" to the Rick and Bubba family!

Prelude

I know many of you who will read this blog already know all about Scott and me, but there are a few of you who may need to be brought up-to-date.  So here goes...  Scott and I were high school sweethearts.  He robbed the cradle, dating a freshman as a senior at Arab High!  We are both from Arab, Alabama -- a place that is dear to our hearts.  In fact, we still travel to Arab each Sunday to attend a church where Scott is currently leading worship.

Scott is a University of Alabama Alum and I a Birmingham-Southern College Alum.  We were married on June 10, 2006, just 2 weeks after I obtained my college degree.  The Lord has richly blessed us in our first 4 years and 4 months of marriage!  We have grown together in Christ as we have watched his plan for us unfold.  We often stop to "count our many blessings, name them one by one," and we are always amazed at what God has done.  

We have a wonderful family and many great friendships (some old, some new) that have helped to shape us into who we are today.  Scott is an only child, which has worked out perfectly for me, considering I am his parents' only girl -- and yes, they spoil me rotten!  I couldn't ask for a better mother and father-in-law!  My parents are my role models.  If you were to ask me, "What do you want to be when you grow up,"  I would say a perfect mixture of my mom and dad -- nothing more, nothing less.  I have one sister (3 1/2 years younger) and she is the light of my life!  We are so close and our relationship means the world to me.  You will be seeing a lot more of her in the blogging days ahead!

Scott and I live in Homewood, and we absolutely love it here.  We think we may just stay forever. :)  We have a yorkie named Hobie (4 years old and a pure hot mess)!  He is fun and he is trouble, but more fun than trouble for sure!  It's just the three of us and life is good.

Medical school and the banking world keep us both very busy, but we still manage to make some time for our favorite things:  we love sports (to watch: football/baseball/basketball and to play: tennis and golf), enjoy running, love all kinds of music/shows/entertainment and we are always looking forward to our next getaway -- we love to travel.  We have managed to pack many fun vacations into these short 4 years.  Oh the memories!  Don't worry, there are many more to come!  Another favorite of ours is Alabama Football. We love cheering on the Crimson Tide!

Now, you probably know more about the two of us than you did before!  My future posts will reveal much more.  Stay tuned!
